This simple soup is the perfect lunchtime staple. Not only is it super tasty, it's packed full of healthy fats, keeping you fuller for longer. Why not give it a go?
Ingredients
- 2 medium avocados
- 3/4 of a medium cucumber
- 1 celery stalk
- Juice of 1 lime
- Small handful of fresh coriander
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1 teaspoon tamari sauce
- 1 cup of water
Method
- Place all the ingredients into a high-speed blender and blend until smooth.
- Chill for 10 minutes and then serve immediately.
- To garnish use some watercress, radishes and seeds of your choice.
