Chilled avocado soup

This simple soup is the perfect lunchtime staple. Not only is it super tasty, it's packed full of healthy fats, keeping you fuller for longer. Why not give it a go?


  • 2 medium avocados
  • 3/4 of a medium cucumber
  • 1 celery stalk
  • Juice of 1 lime
  • Small handful of fresh coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt 
  • 1 teaspoon tamari sauce
  • 1 cup of water 


  • Place all the ingredients into a high-speed blender and blend until smooth.
  • Chill for 10 minutes and then serve immediately.
  • To garnish use some watercress, radishes and seeds of your choice.
