After a week away eating considerably more cheese and bread than is acceptable to eat in a month, this has made a welcome breakfast upon my return. I’ve called this a shake because it’s so thick and delicious that I feel calling it a smoothie doesn’t really do it justice!
I love using Cocoface (the UK’s importer of raw & organic coconuts) for this recipe as you can use both the flesh and the water. It’s great for skin due to the good fats provided by the coconut flesh and the hydrating properties of the coconut water. The coconut kefir provides gut friendly probiotics whilst the hemp seeds provide the protein. I usually guesstimate when it comes to quantities so play around to find what works for you. Using the contents of the whole coconut will usually make enough for quite a few portions.
Ingredients
- Coconut Meat
- Coconut Water
- Cacao Powder
- Coconut Kefir
- Raw Honey
- Ground Hemp Seeds
- Unsweetened Almond Milk
- Ice cubes
Just blend up the ingredients in a high-powered blender and enjoy! Also, who am I to stop you if you want to add a little rum for an alternative healthy-ish cocktail?
