Beat the late afternoon fridge raid with these simple egg bites. Made with minimal ingredients and perfect to make in batches for busy days.
Recipe makes 8-10 muffins
You will need
- 5 eggs
- 10 cherry tomatoes chopped
- 100g mozzarella sliced into small pieces
- 2 handfuls of spinach chopped finely
- Salt and pepper

Method
- Whisk the eggs, add the rest of the ingredients and season well with salt and pepper.
- Pour into a muffin baking tray.
- Place into a pre-heated oven at 170c for around 18-20 minutes until golden on the top.
