Homemade egg muffins for hungry kids

Beat the late afternoon fridge raid with these simple egg bites. Made with minimal ingredients and perfect to make in batches for busy days.

Recipe makes 8-10 muffins

You will need:

  • 5 eggs
  • 10 cherry tomatoes chopped
  • 100g mozzarella sliced into small pieces
  • 2 handfuls of spinach chopped finely
  • Salt and pepper

Parents - if you’re making these for you we highly recommend adding a spoonful of Skinful.

Method:

Whisk the eggs, add the rest of the ingredients and season well with salt and pepper.

Pour into a muffin baking tray.

Place into a pre-heated oven at 170c for around 18-20 minutes until golden on the top.

Remove from the oven, allow to cool and enjoy!
